Ingredients:
3/4 cup unbleached flour
1/4 cup plus 2 tablespoons cocoa powder
1 cup sugar
1/3 cup unsweetened applesauce
3 egg whites
1 teaspoon vanilla extract
- Preheat the oven to 160°C (325°F Gas mark 3.) Grease and line a 20cm square tin.
- Combine the flour, cocoa and sugar. Stir in the applesauce, egg whites, and vanilla extract.
- Spread the batter evenly in the pan and bake for 23-25 minutes, or just until the edges are firm and the center is almost set.
- Leave to cool and cut into 25 squares.
