Fat Free Brownies

I am beginning a quest to find the perfect brownie and I thought why not start off with a healthy, fat free recipe. These may not be 100% perfect but they're pretty darn close.

Ingredients:
3/4 cup unbleached flour
1/4 cup plus 2 tablespoons cocoa powder
1 cup sugar
1/3 cup unsweetened applesauce
3 egg whites
1 teaspoon vanilla extract

  1. Preheat the oven to 160°C (325°F Gas mark 3.) Grease  and line a 20cm square tin.
  2. Combine the flour, cocoa and sugar. Stir in the applesauce, egg whites, and vanilla extract.
  3.  Spread the batter evenly in the pan and bake for 23-25 minutes, or just until the edges are firm and the center is almost set.
  4. Leave to cool and cut into 25 squares.

Applesauce

Applesauce is a simple recipe, perfect for baking fat free recipies and crumbles. However if you are using this for a crumble don't mash it up as much at the end. This can be made with peeled or unpeeled apples, depending on your preference.


Ingredients:
4 large apples, cored and chopped
175ml water
1/2 teaspoon ground cinnamon
In a saucepan combine all the ingredients. Cover and cook over medium heat for 20 minutes, or until the apples are soft. Allow them cool, then mash with a fork until smooth.
